Hawaiian Chicken

Hawaiian chicken also known as “huli-huli chicken” is a great summer dish. The juicy pineapple goes perfect with the marinated chicken. Make sure garnish with jalapeño slices and serve with cilantro, sour cream and salsa if you so desire.

 

Ingredients:

  • Lodge pre-seasoned cast-iron skillet
  • 1/4 teaspoon black pepper

  • 3/4 teaspoon salt, divided

  • 2 tablespoons lower-sodium soy sauce

  • 1 1/2 teaspoons minced peeled ginger

  • 2 tablespoons ketchup

  • 1/4 cup chopped fresh cilantro

  • Cooking spray

  • 2 cups hot cooked long-grain white rice

  • 2 garlic cloves, minced

  • 1/4 cup pineapple juice

  • 4 (6-ounce) skinless,boneless chicken breast halves

Preparation:

First combine the pineapple juice, lower-sodium soy sauceketchup, minced garlic cloves and peeled ginger.

Reserve ¼ cup marinade and place the remaining marinade in a zip-top plastic bag with the chicken breasts. Then refrigerate for 4 hours.

Chicken breasts in Hawaiian marinade

Coat a pan heated over a medium-high heat with a cooking spray.

Remove the chicken from the bag and discard marinade.

Sprinkle pepper and salt.

Baste the chicken on the pan with 2 tablespoons of the reserved marinade then cook for 6 minutes.

Brown chicken breasts on both sides

Serve with a side of rice or your favorite vegetable.
